THIS IS PETE

AKA, Mr Fish. If you put it quite simply, there is nothing this man doesn't know about good fish husbandry.

Pete monitors the chalk river water 24 hours a day 7 days a week. Carefully checking the flow rates, the temperature and the oxygen levels. He is also responsible for their diet, ensuring the leanest healthiest fish possible.

THIS IS JON

He knows absolutely everything (and I mean everything) about the very best way to smoke our beautiful trout. 

Jon is an expert in his field. With nearly 40 years of smoking fish has taught him the best methods for harnessing the wonderful texture and exquisite flavour of the trout. Only the best local oak is used at Jon’s smokehouse.

THIS IS Fi

Fi is a complete legend. She promotes and sells our trout and, quite honestly, could sell ice to the Eskimos.

Fi is also a trained chef and has been instrumental in helping develop our new Smoked Trout Paté. She has created 3 new delicious dishes for our recipe page - a must if you are hosting this year.

Vix spends her life creating wonderful mouth watering dishes of delicious food, with a reputation for excellence. 

Vix has been cooking professionally for over 20 years. She absolutely loves experimenting with new tastes and flavours. She created our first 6 delicious smoke trout dishes fresh from her kitchen and now on our recipe page.
