Smoked Trout Florentine
 

Poached eggs, Charlie’s Trout, English muffins, 
what more could you ask for the perfect breakfast?

INGREDIENTS

330g Smoked Trout (approx 55g per person)
3 X Wholemeal Muffins, sliced in half
6 Eggs
1 bag of fresh Spinach, cooked
Salt and Pepper
Hollandaise Sauce (optional)



SERVES 6

METHOD

Toast the wholemeal muffins and then slice in half.

Serve some cooked wilted and seasoned spinach and place on top of the muffins.

Add 55g of smoked trout on top of each serving of spinach and muffin.

Top with a softly poached egg and season to taste.

This dish may be complimented with a dollop of hollandaise sauce.
