Smoked Trout TERRINE
 

This exquisite recipe makes a delightful starter or light lunch to make in advance for 8-10 people
and is always a guaranteed crowd pleaser!

INGREDIENTS

500g Cold Smoked Trout
(for the outside of the terrine)

For the filling:
500g Charlie's Handmade Smoked Trout Paté

Cucumber to Garnish

A 500g Loaf Tin
Clingfilm



FEEDS 8-10 FOr a STARTER or lunch

METHOD

Line a loaf tin with clingfilm so that it hangs over both ends.
Layer the tin with strips of Charlie's Cold Smoked Trout (from the 500g pack), overlapping them so there are no gaps, and again, hanging over the sides of the tin. 

Now for the middle.
Spoon 500g of Charlie's Homemade Smoked Trout Paté into the lined loaf tin and level it off. Fold over the trout slices, covering the filling as much as possible and wrap the whole tin in clingfilm. Put in the fridge for 6-7 hours.

When you are ready to serve turn out onto a platter, garnish with cucumber slices and serve with lemon wedges.

Then slice accordingly to the most deserving!


 

As this recipe needs to sit in the fridge for a few hours it is a good idea to make it a day ahead and then you can relax and enjoy your guests when they arrive.
